Tóm tắt

     Chế biến là công đoạn quan trọng trong chuỗi sản xuất của ngành thủy sản, góp phần nâng cao giá trị sản phẩm thủy sản trong chuỗi cung ứng. Ngày nay, việc áp dụng khoa học công nghệ đang được xem là kim chỉ nam để ngành chế biến thủy sản phát triển bền vững. Trên cơ sở dữ liệu thông tin của 270 phiếu điều tra khảo sát về các sản phẩm giá trị gia tăng (GTGT) từ thủy sản cho thấy cơ cấu sản phẩm tập trung nhiều vào nhóm sản phẩm sơ chế từ 26,13 - 44,44% và các sản phẩm thực phẩm GTGT từ 48,14 - 51,52%, các sản phẩm GTGT tận thu từ phụ phẩm (sản phẩm phi thực phẩm) chiếm tỷ trọng rất thấp, có ít hoặc không thu được thông tin qua các kênh phân phối tại trung tâm thương mại. Thực trạng về ứng dụng công nghệ trong chế biến các sản phẩm GTGT từ thủy sản chưa cao, hàm lượng công nghệ trong các sản phẩm còn thấp, thể hiện ở cơ cấu các mặt hàng vẫn nghiêng về sản phẩm thô, các sản phẩm đông lạnh, sản phẩm sơ chế và sản phẩm chế biến thông thường, nhóm các sản phẩm giá trị gia tăng cao, sản phẩm công nghệ cao, chế biến tinh còn rất hạn chế. Các chỉ tiêu đánh giá trực tiếp mức độ phát triển và gia tăng của công nghệ đều có điểm số thấp <40% so với điểm tối đa, có tiêu chí đánh giá gián tiếp có điểm số cao hơn. Căn cứ trên kết quả đánh giá thực trạng công nghệ sản xuất các sản phẩm GTGT từ thủy sản, một số giải pháp đã được đề xuất như giải pháp về điều chỉnh công nghệ để phát triển và nâng cao chất lượng sản phẩm GTGT, giải pháp về sản xuất theo hướng tăng cường liên kết sản xuất nguyên liệu - chế biến - tiêu thụ, giải pháp về chuyển dịch cơ cấu sản phẩm chế biến theo hướng nâng cao tỷ trọng các sản phẩm có GTGT cao, nâng cao chất lượng và an toàn thực phẩm, giải phát nâng cao hiệu quả sử dụng phế phụ phẩm và phát triển công nghiệp hỗ trợ, giải pháp về đào tạo, phát triển nguồn nhân lực.

Summary

Processing is an important step in the production chain of the seafood industry, contributing to improving the value of seafood products in the supply chain. Today, the application of science and technology is being considered as a guideline for the sustainable development of the seafood processing industry. On the basis of information data of 270 survey questionnaires about value-added products (VAT) from seafood, it shows that the product structure focuses more on the group of preliminary products from 26.13 to 44.44% and food products with value added from 48.14 to 51.52%, value added products recovered from by-products (non-food products) account for a very low proportion, with little or no information obtained through distribution channels in shopping centers. The current situation of technology application in processing value-added products from seafood is not high, the technology content in the products is still low, reflected in the structure of products still leaning towards raw products, frozen products. cold, semi-processed and normally processed products, group of high value-added products, high-tech products, and refined products are still very limited. The indicators that directly assess the level of technology development and increase have low scores <40% compared to the maximum score, and indirect evaluation criteria have higher scores. Based on the results of the assessment of the current status of the technology for the production of value-added products from seafood, a number of solutions have been proposed such as the solution of technology adjustment to develop and improve the quality of value-added products, the solution to the problem, solutions on production in the direction of strengthening the link of raw material production - processing - consumption, solutions on restructuring processed products towards increasing the proportion of products with high added-value, improving the quality and food safety, solving to improve the efficiency of using waste by-products and developing supporting industries, solutions for training and human resource development.
